When I make a roast chicken, I always have some left over the next day. We’re only two adult people in our household, so we really can’t eat an entire chicken in a day. My husband, however, is a picky eater. Although he doesn’t mind eating left overs, he won’t eat it when it’s been in the refrigerator for more than one to two days. What I do, so he doesn’t notice, is that I re-purpose the left over chicken into something else, like left-over chicken burritos and left-over chicken fried rice.

In this left-over chicken recipe, I use left-overs from my roast chicken recipe (together with its juices). In this way, I don’t have to season my chicken. The juices of the left-over chicken season the vegetables and the rice. However, if you’re using entirely new chicken, it’s important that you season your chicken, your vegetables, and your rice. Oyster sauce is an easy way to season rice and vegetables. I don’t normally find it in Western grocery stories, so if you want some, you can easily order it from Amazon.

I use whatever vegetables I have that I can saute and it will easily turn soft. Don’t feel constrained to use the vegetables that I list in the recipe. In fact, that’s the beauty of cooking. You can use whatever you have on hand, and more often than not, it will still taste good, and at the very least, edible (if you cook it right and don’t burn it!).

In both left-over chicken recipes, I mix the vegetables and chicken together. I only deviate, when I start to assemble the dish. For the burrito, I lay the burrito on aluminum foil (for easy wrapping), and I place the left-over chicken-vegetable mixture there together with cheese. For the fried rice, I just add rice to the leftover chicken-vegetable mixture to make the leftover chicken fried rice.

Left Over Chicken Vegetable Mix

Using left over roast chicken to make a base recipe for chicken fried rice or chicken burrito

Ingredients
  

  • Left over chicken
  • 1 pc red bell pepper chopped
  • 1 pc medium onion chopped
  • 6 cloves garlic minced
  • 8 pcs cherry tomatoes halved
  • Handful spinach
  • olive oil

Instructions
 

  • Heat some olive oil in a pan.
  • Add the bell pepper, season with tiny pinch of salt. Add onion, season again with tiny pinch of salt. Add cherry tomatoes and season once again with tiny pinch of salt. Add garlic and season with tiny pinch of salt. Seasoning a little bit each time builds up the flavor without being salty.
  • Add spinach. Once wilted, add chicken.
  • Use as base recipe for chicken fried rice or chicken burrito.

Left Over Chicken Burrito

Using left over chicken to make a yummy easy burrito

Ingredients
  

  • aluminum foil
  • leftover chicken vegetable mix see above
  • tortilla wrap
  • 1 tbsp ketchup
  • 1 tbsp mayonnaise
  • 1 cup mozzarella shredded

Instructions
 

  • Place tortilla wrap on aluminum foil.
  • Put a tablespoon each of ketchup and mayonnaise on tortilla. Mix it together with a spoon.
  • Put shredded mozzarella on the tortilla. Add chicken vegetable mixture. Top again with shredded mozzarella cheese.
  • Envelope the chicken-vegetable mixture with the tortilla. Fold the bottom of the tortilla, the sides, then the top.
  • Wrap with aluminum foil. When ready to eat, pop in heated oven for 5 minutes.

Ingredients
  

  • leftover chicken vegetable mix see above
  • rice

Instructions
 

  • Put some rice on a pan. Mix with the chicken vegetable mixture.
  • Serve.
